This creamy and comforting Rice Pudding recipe features tender short-grain rice simmered gently in whole milk with a touch of sugar and cinnamon. Enriched with Greek yogurt and fragrant vanilla bean paste, it offers a rich, velvety texture and subtle tang, perfect for a warm dessert or snack. Optional raisins add a sweet, chewy contrast to the smooth base.

Ingredients

Main Ingredients

  • 4 1/2 cups whole milk
  • 1/4 cup sugar
  • 1/8 teaspoon kosher salt
  • 3/4 cup uncooked short-grain white rice (such as arborio)
  • 1/4 cup plain Greek yogurt (full fat, room temperature)
  • 1 1/2 teaspoons vanilla bean paste
  • 1/2 teaspoon ground cinnamon
  • Raisins (optional)

Instructions

  1. Bring Milk Mixture to Boil: In a large saucepan, combine the whole milk, sugar, and kosher salt. Place the saucepan over medium-high heat and bring the mixture to a gentle boil, stirring occasionally to prevent scorching.
  2. Add Rice and Simmer: Once boiling, stir in the uncooked short-grain rice. Reduce the heat to low and partially cover the saucepan with a lid to allow steam to escape. Simmer gently, stirring frequently to prevent sticking and ensure even cooking, for 25-30 minutes or until the rice is tender and the pudding has thickened. Keep in mind the pudding will thicken further as it cools.
  3. Finish the Pudding: Remove the saucepan from the heat. Stir in the ground cinnamon, vanilla bean paste, and the full-fat Greek yogurt until fully incorporated. If using, add raisins and mix well. If the pudding is too thick, add a splash of milk to reach desired consistency.
  4. Serve: Serve the rice pudding warm or hot and garnish with extra raisins and a sprinkle of cinnamon if desired.

Notes

  • Use short-grain rice like arborio for creamier texture.
  • Stir frequently when simmering to prevent rice from sticking or burning.
  • Greek yogurt adds a slight tang and richness; full-fat is preferred for best flavor and texture.
  • Rice pudding thickens as it cools; adjust consistency by adding milk as needed.
  • Raisins are optional but add a nice sweetness and texture contrast.
  • This pudding can be served warm or chilled according to preference.
