Ingredients

Chicken

  • 2 large boneless, skinless chicken breasts

Sauce

  • 10.5 oz. cream of chicken soup
  • 1 ½ cups milk
  • 1 cup sour cream (at room temperature)
  • ½ teaspoon onion powder
  • 1 oz. packet Ranch seasoning mix

Instructions

  1. Prepare the Chicken: Slice each chicken breast into 2 to 3 thinner slices, about ½ inch thick. Pound them lightly with a meat tenderizer if necessary to ensure even thickness and to help the chicken become plump when cooked.
  2. Season the Chicken: Pat the chicken slices completely dry using paper towels. Season each side generously with Italian seasoning, salt, and pepper. Brush one side of each piece with melted butter, ensuring the butter isn't too hot to avoid cooking the chicken prematurely.
  3. Sear the Chicken: Heat 1 to 2 tablespoons of olive oil in a large skillet over medium-high heat. Working in batches, place the chicken slices buttered-side down and sear for 4-5 minutes without moving them to form a golden brown crust. Flip and sear the other side for another 4-5 minutes. Remove the chicken from the pan and set aside.
  4. Make the Sauce: In the same skillet, reduce the heat to medium and add the cream of chicken soup, milk, sour cream, onion powder, and ranch seasoning mix. Stir well to combine all ingredients and bring the sauce to a gentle bubble. Let it simmer and reduce for about 5 minutes, stirring occasionally to prevent sticking or burning.
  5. Finish Cooking: Return the seared chicken slices to the skillet, nestling them into the sauce. Spoon some sauce over the chicken to coat. Partially cover the skillet with a lid and let the chicken heat through and absorb the flavors of the sauce for approximately 10 minutes on low-medium heat.
  6. Serve: Serve the creamy ranch chicken hot, optionally with baked potatoes spooned with extra sauce for a hearty meal.
