This Pumpkin Spice Chia Pudding is a creamy, naturally sweetened dessert or breakfast option, combining the hearty texture of chia seeds with the warm flavors of pumpkin and classic autumn spices. Easy to prepare and nutritious, it’s perfect for a cozy seasonal treat.

Ingredients

Chia Pudding Base

  • 3 tablespoons chia seeds
  • 1/2 cup milk
  • 1 tablespoon maple syrup
  • 1/4 teaspoon vanilla extract

Pumpkin Spice Mix

  • 1/4 cup pumpkin puree
  • 1/4 teaspoon ground cinnamon
  • 1 pinch ground ginger
  • 1 pinch ground nutmeg
  • 1 pinch ground cloves

Instructions

  1. Mix Ingredients: In a medium bowl, combine chia seeds, milk, maple syrup, and vanilla extract. Stir thoroughly to ensure the chia seeds are evenly distributed and begin absorbing the liquid.
  2. Add Pumpkin and Spices: Incorporate the pumpkin puree along with ground cinnamon, ginger, nutmeg, and cloves into the mixture. Stir well so that the spices and pumpkin are fully blended into the base.
  3. Refrigerate: Cover the bowl with plastic wrap or transfer to an airtight container and refrigerate for at least 4 hours, preferably overnight. This allows the chia seeds to swell and thicken into a pudding-like consistency.
  4. Serve: After chilling, give the pudding a good stir. Serve chilled, optionally topped with nuts, seeds, or a sprinkle of cinnamon for extra flavor and texture.

Notes

  • You can replace maple syrup with honey or agave nectar according to preference.
  • Use any type of milk including dairy-free alternatives such as almond, oat, or coconut milk.
  • For a smoother texture, blend the mixture before refrigerating.
  • Store leftovers in a sealed container in the refrigerator for up to 3 days.
