  • 1 tablespoon olive oil
  • 1 shallot, chopped
  • 2 tablespoons sherry wine, white wine, or water
  • Salt and pepper to taste
  • 1 teaspoon fresh thyme (or tarragon)

Stir again after 10 minutes, then cook for another 10-15 minutes, stirring occasionally, until creamy and thickened. Stir in 2-3 tablespoons olive oil, butter, or ¼ cup goat cheese. Turn off the heat.
  2. Prepare the Gremolata: While the polenta cooks, prepare a fresh gremolata mixture according to your preference and set aside for serving.
  3. Sauté the Vegetables: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add 1 cup each of morel and porcini mushrooms first; sauté for 4-5 minutes until just tender. Add the chopped shallot and 2 cups asparagus along with any other selected veggies like fiddlehead ferns. Season with salt and pepper; stir frequently. Lower heat and cook gently for about 5 minutes until vegetables are al dente or just tender. Add 2 tablespoons sherry, white wine, or water to deglaze the pan, increasing heat briefly to cook off the liquid. If needed, cover the pan to lightly steam thicker pieces, taking care to preserve color. If using pea shoots, create a well in the pan center and sauté them briefly, keeping them separate.
  4. Assemble the Dish: Serve the creamy polenta in individual bowls or on a large platter. Top with a generous mound of the sautéed spring vegetables and arrange pea shoots as garnish if using.
