1 ½ lbs. mushrooms, cleaned and sliced
1 small onion, finely diced
2 garlic cloves, chopped

Instructions
Prepare Ingredients: Clean and slice the mushrooms, finely dice the onion, chop the garlic cloves, and chop the parsley. Measure out the rice and broth for easy access during cooking.
Sauté Vegetables: Heat 2 tablespoons of olive oil and 1 tablespoon of vegan butter in a large skillet over medium heat. Add the diced onion and chopped garlic, sautéing until soft and translucent, about 3-4 minutes.
Cook Mushrooms: Add the sliced mushrooms to the skillet. Cook, stirring occasionally, until they release their moisture and turn golden brown, about 7-10 minutes. This step intensifies the mushrooms' earthy flavor.
Add Rice: Stir in the Basmati rice to the cooked mushrooms and vegetables. Cook for 1-2 minutes, allowing the rice to toast lightly and absorb the flavors.
Add Broth and Butter: Pour in the fully seasoned vegetable broth and add the remaining 2 tablespoons of vegan butter. Stir to combine and bring the mixture to a gentle boil over medium-high heat.
