This Creamy Mushroom Ramen is a comforting, flavorful vegetarian noodle soup featuring sautéed baby bella mushrooms, fresh spinach, and creamy coconut milk in a rich vegetable broth. Perfect for a quick weeknight meal, this recipe skips the seasoning packet of the ramen noodles to keep the flavors fresh and natural, with an optional spicy kick from chili garlic sauce or sriracha.

Ingredients

Main Ingredients

  • 1/2 Tbsp cooking oil
  • 4 oz. baby bella mushrooms, sliced
  • 1.5 cups vegetable broth
  • 1 handful fresh spinach
  • 1 package ramen noodles, seasoning packet discarded
  • 1/2 cup canned coconut milk

Optional Garnishes

  • 1 green onion, sliced
  • 1 Tbsp chili garlic sauce or sriracha

Instructions

  1. Heat the oil: In a medium-sized pot or deep skillet, warm 1/2 tablespoon of cooking oil over medium heat to prepare for sautéing the mushrooms.
  2. Sauté the mushrooms: Add the sliced baby bella mushrooms to the hot oil and cook for about 5 minutes, stirring occasionally, until they soften and release their moisture, becoming tender and flavorful.
  3. Add vegetable broth: Pour 1.5 cups of vegetable broth into the pot with the mushrooms. Bring it to a gentle boil to combine the flavors and prepare for the noodles.
  4. Cook the ramen noodles: Add the ramen noodles (without the seasoning packet) to the boiling broth and cook according to package instructions, usually around 3 minutes, until the noodles are cooked through but still slightly firm.
  5. Incorporate coconut milk and spinach: Stir in 1/2 cup of canned coconut milk and add the fresh spinach. Cook for an additional 1-2 minutes until the spinach wilts and the broth becomes rich and creamy.
  6. Serve and garnish: Ladle the creamy mushroom ramen into bowls. Garnish with sliced green onion and drizzle with chili garlic sauce or sriracha if desired for added heat and flavor.

Notes

  • Discard the ramen seasoning packet to avoid excess sodium and artificial flavors.
  • Use fresh baby bella mushrooms for the best texture and umami flavor.
  • Adjust chili garlic sauce amount to your preferred spice level.
  • For a richer broth, you can add an extra 1/4 cup of coconut milk.
  • This recipe can easily be made vegan and vegetarian friendly.
