Ingredients

Proteins and Fats

  • 1 ½ lbs boneless skinless chicken thighs (organic, pasture-raised when possible)
  • 2 Tbsp coconut oil (divided, or substitute with avocado oil)

Vegetables and Aromatics

  • 1 cup diced white or yellow onion (about ½ medium onion or 160 g)
  • 2 cups finely chopped cremini or white button mushrooms
  • 3 cloves garlic, minced
  • 2 Tbsp minced fresh ginger
  • Sliced green onion (for garnish)

Liquids and Sauces

  • 1 (14-oz.) can light coconut milk
  • 3 Tbsp tamari (or soy sauce; ensure gluten-free if needed)
  • 2 Tbsp apple cider vinegar

Seasonings and Thickeners

  • 1/4 tsp red pepper flakes (optional)
  • 1 ½ Tbsp arrowroot powder (or tapioca starch)

Serving Suggestions

  • Sesame seeds (for garnish)
  • White rice (or brown rice, coconut rice, cauliflower rice, or quinoa)
  • Steamed or sautéed vegetables such as green beans, broccoli, kale, or collards

Instructions

  1. Sauté Onions and Mushrooms: Heat a large rimmed skillet or pot over medium heat with 1 tablespoon of coconut oil. Once hot, add the diced onion and cook for 3-4 minutes until starting to soften. Add the chopped mushrooms and continue cooking for 8-10 minutes, stirring occasionally, until the mushrooms release their moisture and begin to brown.
  2. Add Garlic, Ginger, and Brown Chicken: Add minced garlic and ginger to the pan and sauté for 1-2 minutes until fragrant. Push the vegetables to the edges of the pan and add the remaining 1 tablespoon of coconut oil. Place the chicken thighs in the center and brown them lightly, about 2 minutes on each side.
  3. Simmer with Coconut Milk and Seasonings: Pour in the light coconut milk, tamari, apple cider vinegar, and optional red pepper flakes. Stir well to combine. Bring the mixture to a simmer over medium heat, then cover and reduce the heat to low. Let it simmer gently for 15-20 minutes until the chicken is cooked through and flavors meld.
  4. Thicken the Sauce: In a small bowl, whisk together the arrowroot powder with 1 tablespoon of water to create a slurry. Pour this into the skillet and stir to incorporate. Bring the sauce back to a simmer, uncovered, and cook for an additional 4-5 minutes, stirring frequently, until the sauce thickens slightly.
  5. Serve: Spoon the creamy mushroom chicken over cooked white rice or your preferred grain. Garnish with sliced green onions and sesame seeds if desired. Accompany with steamed or sautéed vegetables like green beans, broccoli, kale, or collards to complete the meal.
  6. Storage and Reheating: Store any leftovers in a sealed container in the refrigerator for up to 2-3 days, or freeze for up to 1 month. Note that the sauce may thicken as it cools but will loosen again when reheated on the stovetop until warmed through.

Notes

  • Use coconut oil for a tropical flavor; avocado oil can be substituted if preferred.
  • Choose boneless, skinless chicken thighs for tenderness and quick cooking.
  • The arrowroot slurry is key to achieving the creamy, thickened sauce without flour.
  • To make this dish gluten-free, ensure tamari or soy sauce is certified gluten-free.
  • Red pepper flakes add a mild heat, but can be omitted for a milder dish.
  • Serving suggestions include various types of rice or alternative grains, and a variety of green vegetables for balance.
  • For a vegetarian or vegan adaptation, substitute chicken with firm tofu or tempeh and adjust cooking times accordingly.
