This creamy garlic parmesan rice recipe is a comforting and flavorful side dish featuring tender long-grain white rice cooked in a rich garlic butter and chicken stock base, then finished with whole milk and freshly grated parmesan cheese for a luscious, cheesy finish.

Ingredients

Rice and Stock

  • 1 cup long-grain white rice
  • 2¼ cups chicken stock (or vegetable stock)
  • ½ teaspoon kosher salt

Flavorings

  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • ¼ cup whole milk
  • ½ cup freshly grated parmesan cheese

Instructions

  1. Rinse: Rinse the long-grain white rice thoroughly under cold water using a fine mesh strainer until the water runs clear. This removes excess starch and prevents the rice from becoming gummy. Set the rinsed rice aside.
  2. Sauté Garlic: In a large saucepan, melt the butter over medium-low heat. Add the minced garlic and sauté gently for 2 to 3 minutes, stirring frequently, until fragrant but not browned, to infuse the butter with garlic flavor.
  3. Toast Rice: Add the drained rice to the saucepan with the garlic butter. Stir continuously and toast the rice for 2 minutes to lightly brown the grains and enhance the nuttiness.
  4. Add Liquid and Simmer: Pour in the chicken stock and sprinkle in the kosher salt. Increase the heat to high and bring the mixture to a low boil. Once boiling, reduce the heat to low, cover the saucepan with a lid, and simmer gently for 18 minutes without lifting the lid.
  5. Rest the Rice: After 18 minutes, turn off the heat but leave the lid on. Allow the rice to rest undisturbed for 10 minutes to absorb any remaining moisture and finish cooking through steam.
  6. Prepare Parmesan Milk Mixture: While the rice is resting, heat the whole milk in short 30-second increments in the microwave until it is warm but not boiling. Stir the freshly grated parmesan cheese into the warm milk until fully melted, creating a creamy cheese sauce.
  7. Combine and Serve: Fluff the rested rice with a fork. Gradually stir in the warm parmesan milk mixture until the rice is evenly coated and creamy. Serve immediately to enjoy the rich garlic and cheesy flavors at their best.

Notes

  • For a vegetarian version, substitute chicken stock with vegetable stock.
  • Use freshly grated parmesan cheese for the best flavor and smooth melting.
  • Do not lift the lid during simmering and resting to ensure even cooking.
  • To reduce sodium, use low-sodium stock and adjust salt accordingly.
  • This rice pairs beautifully with grilled or roasted meats and vegetables.
