Ingredients

Chicken & Seasoning

  • 2 large boneless skinless chicken breasts
  • Salt and Pepper, to taste
  • 3 teaspoons Italian seasonings
  • ⅓ cup flour
  • 4 tablespoons Parmesan cheese (shredded)
  • 3 tablespoons olive oil

Sauce

  • 2 ½ cups chicken broth
  • 1 beef bouillon cube (or 1 tsp better than bouillon)
  • 1 teaspoon low sodium soy sauce (can substitute Worcestershire sauce)
  • 1 teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon mustard powder
  • 3 tablespoons butter
  • 10 whole cloves garlic
  • 3 tablespoons flour
  • ½ cup heavy cream
  • ½ cup Parmesan cheese (optional)

Instructions

  1. Prep Work: Combine chicken broth, bouillon cube, soy sauce, onion powder, mustard powder, and thyme in a large measuring cup with a spout. Set aside. Combine ⅓ cup flour and 4 tablespoons Parmesan cheese on a plate. Measure out remaining ingredients.
  2. Prepare the Chicken: Slice chicken breasts in half lengthwise to create 2-3 thinner slices. Cover with plastic wrap and use the textured side of a meat mallet to pound to about ½ inch thickness. Pat dry completely.
  3. Season and Dredge: Season both sides of chicken slices with Italian seasoning, salt, and pepper. Dredge chicken in the flour-Parmesan mixture, tapping off any excess flour.
  4. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Sear chicken in batches for 4-5 minutes per side until a golden crust forms. Remove and set aside.
  5. Make the Sauce - Caramelize Garlic: Reduce heat to medium or medium-low, melt butter in the same skillet. Use a silicone spatula to scrape up browned bits from the bottom of the skillet. Add whole garlic cloves and cook, allowing them to soften and caramelize for 6-7 minutes.
  6. Cook the Roux: Sprinkle 3 tablespoons flour over garlic and butter, stirring continuously to cook flour for 1-2 minutes until the raw flour smell disappears.
  7. Add Liquids: Gradually add the reserved chicken broth mixture in splashes while stirring constantly to avoid lumps.
  8. Finish the Sauce: Stir in the heavy cream and bring the sauce to a boil, then reduce heat to low. Slowly incorporate the Parmesan cheese, stirring until smooth.
  9. Simmer Chicken: Return the seared chicken pieces along with any accumulated juices to the skillet. Spoon sauce over chicken, partially cover, and simmer for 5 minutes to meld flavors and cook through.
  10. Serve: Garnish with fresh parsley if desired. Serve hot alongside mashed potatoes and roasted green beans for a complete meal.
