This classic deviled eggs recipe offers a creamy and tangy twist with Dijon mustard, fresh lemon juice, and a hint of rosemary, making it a perfect appetizer or party snack. Garnished with vibrant pomegranate seeds and fresh rosemary sprigs, these deviled eggs are both visually appealing and delicious.

Ingredients

Deviled Eggs

  • 6 boiled eggs
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard (can substitute with yellow mustard or brown mustard)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon creme fraiche (or substitute with soft cream cheese or sour cream)
  • 1 teaspoon fresh finely chopped rosemary
  • ½ teaspoon sea salt
  • ½ teaspoon ground pepper

Garnish Decoration

  • ¼ cup pomegranate seeds
  • Sprigs of fresh rosemary

Instructions

  1. Boil and Peel the Eggs: Place the eggs in a saucepan and cover with cold water. Bring to a boil, then reduce heat and simmer for 10 minutes. Cool the eggs under cold running water and carefully peel off the shells.
  2. Prepare Egg Yolks: Slice the boiled eggs in half lengthwise. Gently remove the yolks and place them into a mixing bowl, setting the whites aside on a serving plate.
  3. Mix the Filling: Mash the yolks with a fork until crumbly. Add mayonnaise, Dijon mustard, fresh lemon juice, creme fraiche, finely chopped rosemary, sea salt, and ground pepper. Stir until the mixture is smooth and creamy.
  4. Fill the Egg Whites: Using a spoon or piping bag, evenly fill the hollowed egg white halves with the yolk mixture.
  5. Garnish and Serve: Sprinkle pomegranate seeds on top of the filled eggs for a pop of color and freshness. Add sprigs of fresh rosemary as a decorative touch. Serve chilled.

Notes

  • You can substitute Dijon mustard with yellow or brown mustard depending on your taste preference.
  • For a lighter option, use low-fat mayonnaise or Greek yogurt instead of mayonnaise and creme fraiche.
  • Ensure eggs are fully cooled and peeled cleanly for best presentation.
  • Pomegranate seeds add a burst of sweetness and vibrant color but can be omitted if unavailable.
  • These deviled eggs can be prepared up to a day in advance and refrigerated until serving.
