This Creamy Coconut Chai Recipe is a cozy, warming drink perfect for cold nights. It combines aromatic chai tea infused with whole spices like cinnamon, star anise, cardamom, cloves, and nutmeg, topped with frothy and creamy unsweetened coconut milk. This sugar-free coconut chai latte can be sweetened to taste and makes a comforting beverage for two.

Ingredients

Tea Base

  • 2 ½ cups water
  • 2 chai tea bags

Spices

  • 1 cinnamon stick
  • 1 star anise
  • ¼ tsp whole cardamom pods or cardamom seeds
  • ¼ tsp whole cloves
  • ¼ tsp nutmeg (cracked, using a small piece)

Milk and Flavoring

  • 1 cup unsweetened coconut milk (Trader Joe's Reduced Fat canned coconut milk recommended)
  • ½ tsp vanilla extract

Optional

  • Sweetener of choice (honey, maple syrup, sugar, etc.)

Instructions

  1. Simmer Tea and Spices: In a saucepan, combine 2 ½ cups water, 2 chai tea bags, 1 cinnamon stick, 1 star anise, ¼ tsp cardamom pods/seeds, ¼ tsp whole cloves, and a small piece of cracked nutmeg. Bring mixture to a boil, then reduce heat and let it simmer gently for 5 minutes to infuse the flavors.
  2. Warm and Froth Coconut Milk: While the tea simmers, warm 1 cup of unsweetened coconut milk together with ½ tsp vanilla extract until hot. Use a milk frother or an immersion blender to create frothy, creamy texture in the coconut milk.
  3. Strain Tea: After simmering, strain the tea carefully to remove the tea bags and whole spices, resulting in a smooth chai infusion.
  4. Assemble the Latte: Divide the strained chai tea evenly between 2 large mugs or 4 small cups. Top each with frothy coconut milk. Garnish with a cinnamon stick, star anise, and a light sprinkle of ground vanilla bean powder for extra aroma and presentation.
  5. Sweeten if Desired: Add sweetener to taste, choosing honey, maple syrup, sugar, or another preferred sweetener for a touch of sweetness. Stir gently to combine.

Notes

  • Use canned coconut milk for a richer and creamier texture compared to refrigerated coconut milk.
  • If you want a dirty chai, add a shot of espresso to the finished latte.
  • Whole spices make straining easier and deliver fresher flavors than pre-ground spices.
  • Adjust sweetness according to personal preference or dietary needs; the base recipe is naturally sugar-free.
  • This recipe makes enough for two servings.
