Ingredients

Chicken Marinade

  • 6 Boneless chicken thigh fillets
  • 2 garlic cloves, crushed
  • 1 onion, finely sliced
  • 1 tsp vegetable oil
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp chilli powder
  • 1 cup Greek yogurt
  • 1 tbsp lemon juice

Sauce

  • 1 tbsp tahini (optional)
  • 3 garlic cloves, crushed
  • Handful fresh mint leaves
  • Pinch of salt

Salad & Serving

  • Simple salad (lettuce, tomatoes, cucumber, with a little lemon juice)
  • Flatbread or naan bread of your choice
  • Chips (optional side)

Instructions

  1. Prepare Ingredients: Trim any excess fat from the chicken thigh fillets, finely slice the onion, and peel and crush the garlic cloves to be used in the marinade.
  2. Marinate Chicken: In a bowl, combine the chicken thighs with sliced onion, crushed garlic, vegetable oil, paprika, ground cumin, ground coriander, chilli powder, Greek yogurt, and lemon juice. Mix well until all chicken pieces are well coated. Cover and refrigerate to marinate for at least 30 minutes; for best flavor, marinate for a few hours or overnight.
  3. Cook Chicken in Air Fryer: Preheat one drawer of your Ninja Dual Air Fryer with the crisper drawer inserted. Place the marinated chicken pieces in the air fryer drawer in a single layer. Set to 'Air Fry' mode and cook for 15 minutes until the chicken is cooked through and slightly crispy on the edges.
  4. Prepare Sauce and Salad: While the chicken cooks, combine tahini (if using), crushed garlic cloves, fresh mint leaves, and a pinch of salt in a small bowl. Stir well to create a fresh minty sauce. Prepare a simple salad using lettuce, chopped tomatoes, cucumber, and a squeeze of lemon juice.
