This Creamy Chicken and Broccoli dish offers a delightful blend of tender, golden-brown chicken breasts simmered in a luscious, garlicky almond milk sauce with perfectly cooked broccoli florets. It is a wholesome, gluten-free, and flavorful meal that comes together quickly in about 30 minutes, making it perfect for a nutritious weeknight dinner.

Ingredients

Chicken

  • 2 pounds boneless chicken breasts
  • Kosher salt and ground pepper (to taste)
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil (divided)

Sauce and Vegetables

  • 4-5 cloves garlic (minced)
  • 1 1/2 cups almond milk (or any other milk)
  • 1 tablespoon gluten-free flour (or any other flour)
  • 1 medium broccoli head (chopped, about 3 cups)
  • 2 tablespoons fresh parsley (chopped)
  • Lemon wedges (optional, to serve)

Instructions

  1. Season the Chicken: Rub the boneless chicken breasts evenly with kosher salt, ground pepper, and Italian seasoning on all sides to infuse flavor.
  2. Prepare the Sauce Mixture: In a small bowl, whisk together the almond milk and gluten-free flour until smooth and set aside; this will thicken the sauce.
  3. Cook the Chicken: Heat 1 tablespoon of olive oil in a large pan over medium-high heat. Cook the chicken for about 6-7 minutes per side until golden-brown and fully cooked through. Remove the chicken from the pan and cover it to keep warm.
  4. Sauté the Garlic: Using the same pan, add the remaining tablespoon of olive oil over medium heat. Add the minced garlic and cook for up to 1 minute until fragrant but not browned.
  5. Make the Creamy Sauce: Pour the almond milk and flour mixture into the pan. Stir continuously as it heats, allowing the sauce to thicken almost immediately.
  6. Cook the Broccoli: Add the chopped broccoli florets to the pan with the sauce. Cook for 6-8 minutes, stirring occasionally until the broccoli is tender but still bright green.
  7. Combine and Heat Through: Return the cooked chicken breasts to the pan, nestling them in the sauce and broccoli. Cook for a few more minutes to heat the chicken through and meld the flavors.
  8. Garnish and Serve: Sprinkle the fresh parsley over the dish and serve with lemon wedges on the side for an optional fresh citrus burst.

Notes

  • You can substitute almond milk with any milk of your choice, such as cow’s milk or oat milk.
  • Gluten-free flour can be replaced with all-purpose flour if gluten is not a concern.
  • Adjust seasoning to taste, adding more salt or Italian seasoning if desired.
  • This dish pairs well with steamed rice, quinoa, or your favorite grain.
  • For a richer sauce, you can add a tablespoon of cream or a bit of grated Parmesan cheese.
