Ingredients

Pasta and Vegetables

  • 8 ounces penne pasta
  • 2 cups broccoli, cut into small florets

Sauce and Seasonings

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup grated parmesan cheese

Protein

  • 2 chicken breasts, cooked and cut into small cubes

Instructions

  1. Boil Pasta and Broccoli: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. In the last 5 minutes of cooking, add the broccoli florets to the boiling water with the pasta. Once done, drain both pasta and broccoli in a colander and set aside.
  2. Sauté Onions: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook for 2-3 minutes until softened, stirring occasionally to avoid browning.
  3. Add Garlic and Seasonings: Stir in the minced garlic, salt, and black pepper, cooking for an additional 1 minute until fragrant.
  4. Create Roux: Sprinkle the flour over the onion and garlic mixture and cook for 1-2 minutes, stirring constantly to form a light roux that will thicken the sauce.
  5. Make Cheese Sauce: Gradually whisk in the whole milk, stirring continuously to ensure a smooth sauce without lumps. Cook for 2-3 minutes until the sauce thickens slightly.
  6. Add Parmesan: Stir in the grated parmesan cheese until completely melted and the sauce is smooth and creamy.
  7. Combine Pasta, Broccoli, and Chicken: Add the cooked pasta, broccoli, and diced chicken breasts to the pot with the parmesan sauce. Stir gently until everything is well coated and heated through, about 2-3 minutes.
  8. Serve: Transfer the Chicken and Broccoli Pasta to a serving bowl. Garnish with additional grated parmesan cheese if desired. Season further to taste and serve hot.

Notes

  • For a lighter version, substitute whole milk with 2% or use half-and-half.
  • You can use pre-cooked rotisserie chicken to save time.
  • To add extra flavor, consider adding a pinch of nutmeg to the cheese sauce.
  • Make sure to cook pasta al dente so it holds texture when mixed with the sauce.
  • This dish can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop or microwave.
