Ingredients

Vegetables

  • 1 large head cauliflower, florets and stems (about 6 cups), reserve about 1 cup for roasting to garnish

Instructions

  1. Prepare the cauliflower: Separate the cauliflower into florets and chop the stems to make about 6 cups. Reserve about 1 cup of florets for roasting as garnish later.
  2. Roast the cauliflower garnish: Toss the reserved cauliflower florets with 1 tablespoon olive oil and spread evenly on a baking sheet. Roast in a 400°F (200°C) oven for 15-20 minutes until golden and tender, then set aside.
  3. Sauté the aromatics: Heat the remaining 1 tablespoon olive oil in a large pot over medium heat. Add the chopped onion, celery, grated carrot, and smashed garlic. Cook for about 5-7 minutes until vegetables are softened and fragrant, stirring occasionally.
  4. Add beans, broth, and thyme: Stir in the rinsed white beans, vegetable broth, and fresh thyme leaves. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes until vegetables are fully cooked and flavors meld together.
  5. Blend the soup: Using an immersion blender, puree the soup directly in the pot until smooth and creamy. Alternatively, transfer the soup in batches to a blender and puree until smooth, then return to the pot.
  6. Adjust seasoning and serve: Taste and adjust seasoning with salt and pepper as needed. Ladle the soup into bowls, garnish with the roasted cauliflower florets, and serve warm.
