Ingredients

Vegetables

  • 2 leeks, medium, cleaned and sliced
  • 2 celery stalks, medium, chopped

  • 600g zucchini, roughly 3 medium, chopped
  • 2 potatoes, medium, peeled and chopped
  • 1 cup frozen peas

  • 2 Tbsp butter (30g)
  • 1 L vegetable stock
  • ½ cup cream
  • 1 tsp salt, plus more to taste
  • A few grinds of pepper, plus more to taste

Instructions

  1. Prepare the vegetables: Clean and chop the leeks, celery, carrot, zucchini, and potatoes into roughly equal sized pieces for even cooking.
  2. Sauté the vegetables: In a large pot over medium heat, melt the butter. Add the sliced leeks, celery, and carrot and sauté until softened, about 5-7 minutes.
  3. Add remaining vegetables and stock: Add the chopped zucchini, potatoes, frozen peas, and vegetable stock to the pot. Stir to combine.
  4. Simmer the soup: Bring the mixture to a boil, then reduce heat to low and let it simmer gently for about 20-25 minutes, or until all vegetables are tender.
  5. Blend the soup: Using an immersion blender or in batches with a blender, puree the soup until smooth and creamy. Be careful when blending hot liquids.
  6. Finish the soup: Stir in the cream to add richness. Season with salt and pepper to taste, adjusting seasoning as needed.
