This Cream of Asparagus Soup is a velvety, comforting dish made with fresh green asparagus, leeks, and ripe Bosc pears, enriched with cream or coconut milk for a silky texture. Perfect for a light lunch or elegant starter, it balances savory and sweet flavors with a hint of lemon and fresh sage.

Ingredients

Vegetables

  • 2 pounds green asparagus, washed and cut into 1-inch pieces
  • 2 leeks (white parts only), halved lengthwise and thinly sliced
  • 4 fresh sage leaves
  • 1 Bosc pear, peeled and roughly chopped

Liquids & Fats

  • 2 tablespoons butter
  • 4 cups vegetable broth
  • 1 cup 35% cream or coconut milk
  • Juice of ½ lemon

Seasoning

  • Salt and pepper to taste

Instructions

  1. Sauté Leeks and Asparagus: Melt butter in a medium-sized soup pot over moderate heat. Add sliced leeks and cook for about 5 minutes until softened. Add asparagus pieces and fresh sage leaves, cooking for another 5 minutes until asparagus begins to soften.
  2. Reserve Garnish: Remove a number of asparagus tips from the pot and set them aside to be used as a garnish later.
  3. Add Pears and Broth: Add the peeled and chopped Bosc pear, lemon juice, and vegetable broth to the pot. Stir well and increase heat to high. Once the soup reaches a boil, reduce heat to a simmer and cook for 5 more minutes.
  4. Puree the Soup: Carefully puree the soup in small batches using a conventional blender or an immersion blender. Blend slowly and cautiously, as the soup is hot.
  5. Finish with Cream: Stir in 1 cup of heavy cream or coconut milk until the soup is creamy and smooth. Season with salt and pepper to your taste.
  6. Serve: Ladle the soup into bowls and garnish with the reserved asparagus tips and a sprinkle of black pepper. Serve immediately for best flavor.
