This Cowboy Butter for Steak recipe is a flavorful compound butter that elevates any grilled or pan-seared steak with a blend of fresh herbs, garlic, smoked paprika, and a touch of heat. Perfectly paired with sirloin steaks, this easy-to-make butter adds a rich, savory finish that enhances the meat's natural flavors.

Ingredients

Cowboy Butter

  • 8 tbsp / 120g Unsalted Butter, softened
  • 2 tbsp very finely diced Fresh Parsley
  • 1 tbsp very finely diced Fresh Chives
  • 1/2 tsp very finely diced Fresh Thyme Leaves
  • 1 clove Garlic, finely grated or minced
  • 2 tsp Lemon Juice
  • 1 tsp Dijon Mustard
  • 3/4 tsp Smoked Paprika
  • 1/2 tsp Worcestershire Sauce
  • 1/2 tsp Chilli Flakes (adjust to spice preference)
  • 1/2 tsp Salt (or to taste)
  • 1/4 tsp Black Pepper (or to taste)

Steak

  • 2 x 220g / 8oz Sirloin Steaks, at room temperature
  • 1 tbsp Vegetable Oil
  • Salt & Black Pepper, as needed

Instructions

  1. Make Cowboy Butter: Combine all the cowboy butter ingredients in a small mixing bowl. Mix thoroughly until everything is well incorporated and smooth. Set aside.
  2. Prepare and Cook Steaks: Pat the sirloin steaks dry with paper towels. Generously season both sides with salt and black pepper. Heat a large cast-iron skillet or heavy-based pan over high heat until very hot. Add the vegetable oil and let it heat for 5-10 seconds.
  3. Sear Steaks: Place the steaks in the hot pan and leave undisturbed for 2 minutes to develop a golden crust. Flip the steaks and cook the other side for an additional 2 minutes for medium-rare doneness.
  4. Rest Steaks: Remove the steaks from the pan and transfer them to a plate or cutting board. Let them rest for 5 minutes to retain juices and ensure tenderness.
  5. Serve: Top each steak with your desired amount of the prepared cowboy butter while still warm. Enjoy the enhanced flavor and richness.

Notes

  • Make sure the butter is softened to room temperature for easy mixing.
  • Adjust the quantity of chili flakes to control the spice level to your preference.
  • Resting the steak is essential to keep it juicy and tender.
  • You can prepare the cowboy butter ahead of time and refrigerate it; bring to room temperature before serving.
  • If preferred, steaks can be cooked to different levels of doneness by adjusting the cooking time.
