Instructions

  1. Prepare Ingredients: Rinse and hull the strawberries, reserving 2 tablespoons of them for topping. Crumble 8 graham crackers and set aside 2 crackers separately to use as garnish.
  2. Blend Mixture: Add cottage cheese, most of the strawberries (excluding the reserved 2 tbsp), honey, vanilla extract, and crumbled graham crackers (except the reserved 2 crackers) into a food processor. Pulse the mixture carefully until combined but still chunky to retain texture.
  3. Fill Molds: Spoon the cottage cheese and strawberry mixture into silicone molds or popsicle trays, filling each cavity evenly.
  4. Add Toppings and Sticks: Place small pieces of the reserved strawberries and crumbled graham crackers on top of the mixture in each mold. Insert lollipop or popsicle sticks firmly into each mold so they remain stable in the thick mixture.
  5. Freeze: Place the filled molds in the freezer and allow them to freeze fully for at least 2 to 3 hours.
