Ingredients

Egg and Dairy Mixture

  • 6 large eggs
  • 8 oz full-fat cottage cheese
  • ½ cup milk (dairy or almond milk)
  • ½ cup crumbled feta cheese

Vegetables and Seasoning

  • 1 cup baby spinach, torn
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Other

  • Cooking spray or oil (for greasing the baking dish)

Instructions

  1. Preheat and prepare baking dish: Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch glass baking dish with cooking spray or oil to prevent the egg bake from sticking.
  2. Mix eggs and cottage cheese: Crack 6 large eggs into the baking dish and add 8 oz of full-fat cottage cheese. Whisk the mixture until they are mostly combined, creating a creamy base.
  3. Add remaining ingredients: Pour in ½ cup of milk (either dairy or almond), add ½ cup of crumbled feta cheese, 1 cup of torn baby spinach, ¼ teaspoon salt, and ⅛ teaspoon of black pepper. Whisk everything again to evenly distribute all ingredients.
  4. Bake the egg bake: Place the baking dish in the preheated oven and bake uncovered for 35 to 40 minutes. Check doneness by inserting a toothpick into the center; it should come out clean when the bake is ready.
  5. Cool and serve: Remove the dish from the oven and let it cool for about 10 minutes. Slice into squares and serve warm for a wholesome breakfast or brunch.

Notes

  • You can substitute the baby spinach with kale or Swiss chard for different greens.
  • For a dairy-free version, use almond milk and skip the feta cheese or use a plant-based cheese alternative.
  • Adding herbs like dill or chives can enhance the flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat thoroughly before serving.
