This Cottage Cheese Alfredo Sauce recipe offers a creamy, protein-packed alternative to traditional Alfredo sauce. Made with low-fat cottage cheese, Parmesan, and garlic, it’s blended to smooth perfection and gently warmed with fettuccine pasta. The sauce is light, tangy, and deliciously satisfying, perfect for a quick 20-minute meal that serves four.

Ingredients

Pasta

  • 8 ounces fettuccine noodles (or pasta of choice)

Sauce

  • 1 (16-ounce) container low-fat cottage cheese (2 cups)
  • ½ cup grated Parmesan cheese (plus additional for serving)
  • ½ cup milk (2% used)
  • 1 garlic clove (roughly chopped, about 1 teaspoon)

Seasoning and Garnish

  • Kosher salt (as needed)
  • Chopped fresh parsley (for garnish)
  • Freshly ground black pepper (to taste)

Instructions

  1. Boil Pasta: Bring a large pot of salted water to a rolling boil. Add the fettuccine noodles and cook according to the package instructions until al dente. Before draining, reserve 1 cup of the pasta cooking water. Drain pasta thoroughly.
  2. Blend Sauce: In a blender or food processor, combine the low-fat cottage cheese, grated Parmesan cheese, milk, and roughly chopped garlic. Blend the mixture until completely smooth and creamy.
  3. Combine Sauce and Pasta: Pour the blended cottage cheese sauce into a wide skillet set over low heat. Add the drained noodles and gently toss together to warm the pasta and sauce. If the sauce is too thick, gradually add the reserved pasta water a little at a time to thin it out. Be careful not to overheat the sauce to prevent it from tightening up or curdling.
  4. Finish and Serve: Taste the sauce and season with kosher salt as needed, noting that saltiness can vary by cottage cheese brand. Top the dish with freshly ground black pepper and chopped parsley. Serve immediately, with extra grated Parmesan cheese sprinkled on top for added flavor.

Notes

  • Reserve pasta water as it helps in thinning the sauce while keeping it creamy.
  • Do not overheat the sauce to prevent it from curdling or tightening.
  • Adjust salt carefully since cottage cheese brands vary in salt content.
  • Fresh parsley adds a bright, fresh finish but can be omitted if unavailable.
  • This sauce can be adapted to other pasta shapes for variety.
