Cosmic Brownies are decadent, fudgy chocolate brownies topped with a rich chocolate ganache and colorful rainbow candy-coated chocolate chips. Perfect for celebrations or a fun treat, these brownies combine a deep cocoa flavor with a creamy frosting and a playful crunch.

Ingredients

Dry Ingredients

  • ¾ cup all-purpose flour (90 grams, for gluten-free use a 1-1 flour)
  • ⅔ cup unsweetened cocoa powder (56 grams)
  • ¾ teaspoon kosher salt

Wet Ingredients

  • 12 tablespoons unsalted butter (170 grams, melted; salted butter can be used if omitting the kosher salt)
  • 1 cup granulated sugar (200 grams, or use brown sugar)
  • ½ cup brown sugar (107 grams)
  • 2 large eggs (50 grams each, room temperature)
  • 1 teaspoon pure vanilla extract (4 grams)

Frosting and Topping

  • 1 cup chocolate chips (170 grams, milk, semisweet, or dark chocolate chips all work)
  • ½ cup heavy cream (114 grams)
  • ¼ cup rainbow candy-coated chocolate chips (43 grams, for topping; use mini M&M's or rainbow sprinkles as alternatives)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 325°F (162°C). Spray a 9x9-inch baking pan with nonstick spray and line it with parchment paper to prevent sticking and ease removal.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour and unsweetened cocoa powder until fully combined and smooth.
  3. Combine Wet Ingredients: In a larger bowl, whisk together the melted butter with granulated and brown sugars until well blended. Add the eggs one at a time, whisking to incorporate, then mix in the vanilla extract and kosher salt.
  4. Combine Batter: Gradually add the dry flour and cocoa mixture to the wet ingredients. Stir gently just until combined, being careful not to overmix to avoid tough brownies.
  5. Pour and Bake: Pour the batter into the prepared pan, spreading evenly with a spatula. Bake for 30-35 minutes or until a toothpick inserted near the center comes out with only a few moist crumbs attached. Remove from oven and allow to cool completely.
  6. Prepare Chocolate Ganache: While brownies bake, heat ½ cup of heavy cream in a small pot over medium-low heat until steaming but not boiling. Remove from heat and stir in 1 cup of chocolate chips until the mixture is smooth and glossy.
  7. Frost Brownies: Spread the warm chocolate ganache evenly over the cooled brownies. Immediately sprinkle the rainbow candy-coated chocolate chips on top for a colorful finish.
  8. Set Frosting: Refrigerate or freeze the brownies to let the ganache set firmly before slicing and serving. This helps the frosting stay intact and enhances the texture.

Notes

  • Use parchment paper for easy removal of brownies from the pan.
  • Do not overmix the batter to keep the brownies fudgy and tender.
  • Adjust the sweetness or chocolate type in the ganache to your preference.
  • Refrigeration of the frosted brownies is essential for clean slicing.
  • For gluten-free option, substitute all-purpose flour with a 1-to-1 gluten-free baking flour.
