This Copycat Chipotle Vinaigrette is a tangy and smoky salad dressing inspired by the popular Chipotle Mexican Grill. It combines red wine vinegar, honey, chipotles in adobo, and a blend of spices emulsified with vegetable oil for a rich, flavorful vinaigrette that complements a variety of salads and dishes.

Ingredients

Vinaigrette Ingredients

  • ½ cup red wine vinegar
  • Heaping ¼ cup honey
  • 2 tablespoons water
  • 2 tablespoons fine sea salt
  • 2-3 chipotles in adobo
  • 1 tablespoon adobo sauce (from the chipotles can)
  • 2 cups vegetable oil
  • 2 teaspoons dried oregano
  • 1 ½ teaspoons black pepper

Instructions

  1. Combine Base Ingredients: Add the red wine vinegar, honey, water, sea salt, chipotles in adobo, and adobo sauce into a food processor or blender.
  2. Blend and Emulsify: Blend on high. With the blender or food processor running, slowly stream in the vegetable oil until the dressing is emulsified and thickened. For a thicker dressing, continue adding more oil slowly as desired.
  3. Add Herbs and Seasoning: Turn off the machine and fold in the dried oregano and black pepper. Taste the dressing and adjust the seasoning if needed.
  4. Refrigerate: Transfer the vinaigrette to a quart jar or another airtight container and refrigerate for 2-4 days to allow flavors to meld before serving.

Notes

  • Adjust the number of chipotles according to desired spiciness.
  • If you prefer a less thick dressing, reduce the amount of oil.
  • Store the vinaigrette in the refrigerator and shake well before each use.
