Instructions

  1. Bloom the Gelatin: Sprinkle 1 ½ teaspoons of unflavored gelatin powder over 3 tablespoons of cold water in a small bowl. Let it sit for 5-10 minutes until it softens and blooms.

Heat the Cream Mixture: In a medium saucepan, combine 1 ½ cups heavy cream, 1 cup whole milk, ½ cup granulated sugar, 2 teaspoons instant espresso powder (or 1 shot brewed espresso), and a pinch of salt. Heat over medium heat, stirring occasionally until the sugar and espresso powder dissolve and the mixture is hot but not boiling.
  3. Dissolve the Gelatin: Remove the saucepan from heat. Add the bloomed gelatin to the hot cream mixture and stir well until the gelatin fully dissolves. Stir in 1 teaspoon vanilla extract to enhance flavor.
  4. Strain and Pour: For a smooth panna cotta, strain the mixture through a fine sieve into a clean bowl or jug. Pour the mixture evenly into serving cups or ramekins.
  5. Chill to Set: Refrigerate the panna cotta for at least 4 hours, or until it is completely set and firm to the touch.
  6. Garnish and Serve: Before serving, dust the top with unsweetened cocoa powder, scatter whole almonds, and add a fresh mint leaf to each serving. Optionally, drizzle with coffee syrup or reduced espresso for extra coffee flavor.
