Ingredients

Tomato Mixture

  • 1/4 cup red onion, diced
  • 3 - 4 cloves garlic, minced
  • 1 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Bread

  • 1 baguette, sliced into 1/2 inch pieces
  • Olive oil, for toasting
  • 1 clove garlic for rubbing on baguette

Instructions

  1. Prepare the tomato mixture: Combine the diced tomatoes, red onion, minced garlic, extra virgin olive oil, balsamic vinegar, and chopped fresh basil in a medium bowl. Season with salt and pepper to taste. Set aside to allow flavors to meld.
  2. Toast the baguette slices: Arrange the baguette slices on a baking sheet and drizzle them lightly with olive oil. Place under the oven broiler and toast until the bread is crispy and lightly browned, watching closely to prevent burning.
  3. Rub garlic on toasted bread: Once the baguette slices are out of the oven, immediately rub each slice with the raw garlic clove to impart a subtle garlic flavor.
