For the Chocolate Glaze:

  • 113 g (½ cup) heavy cream
  • 85 g (3 oz) semi-sweet chocolate

Instructions

  1. Preheat and prepare pan: Preheat your oven to 325°F (163°C). Grease and flour a 9x5 inch loaf pan or line it with parchment paper to prevent sticking.
  2. Combine dry ingredients: In a medium bowl, sift together the all-purpose flour, Dutch process cocoa powder, black cocoa powder, espresso powder (if using), baking powder, and kosher salt. Set aside.
