Ingredients

Pistachio Creme Mousseline

  • ⅓ cup (80 ml) milk
  • ½ teaspoon vanilla extract
  • 2 tablespoons sugar
  • 1 large egg yolk
  • 2 tablespoons all-purpose flour
  • ¼ cup (56 g) unsalted butter, softened
  • 1 teaspoon pistachio extract, or almond extract
  • green food coloring (a few drops)

Vanilla Sable

  • ½ cup (113 g) unsalted butter, room temperature
  • ¼ cup (50 g) granulated sugar
  • 2 tablespoons confectioners’ sugar, sifted
  • ¼ teaspoon salt
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup (130 g) all-purpose flour

Almond Pistachio Nougatine

  • 3 tablespoons unsalted butter
  • 1 tablespoon light corn syrup
  • ⅓ cup (40 g) confectioners’ sugar, sifted
  • ¼ teaspoon pectin
  • ¼ cup (30 g) shelled unsalted pistachios
  • ¼ cup (35 g) raw almonds

Chocolate Mousse

  • 1 cup (238 ml) heavy cream, plus 1/3 cup additional
  • ½ cup (122 ml) milk
  • 2 tablespoons sugar
  • 2 large egg yolks
  • 8 ounces (226 g) milk chocolate, coarsely chopped

Chocolate Glaze

  • ¼ cup (60 ml) water
  • ¾ cup water (separate from above)
  • 2 tablespoons unflavored gelatin powder
  • 1 ⅓ cups (266 g) granulated sugar
  • 14 ounces (396 g) sweetened condensed milk
  • ½ tablespoon vanilla extract
  • 12 ounces (340 g) milk chocolate, coarsely chopped

For Garnish

  • Ground pistachios
  • Whipped cream

Instructions

  1. Make the pistachio creme mousseline: Heat the milk and vanilla extract over medium heat until it just begins to boil. Meanwhile, whisk together sugar, egg yolk, and flour into a smooth paste. Slowly whisk hot milk into the paste, then return mixture to the pot and cook over medium-low heat, whisking continuously until thickened to coat the back of a spoon. Strain through a fine sieve, cover with plastic wrap touching the surface, and refrigerate until set, about 2 hours.
  2. Finish the mousseline: Using an electric mixer, beat chilled pastry cream with softened butter until smooth. Add pistachio or almond extract and a few drops of green food coloring. Beat until fully combined. Pipe into 24 dome molds (0.95-inch) and freeze to set.
  3. Make the vanilla sable: Beat room-temperature butter, granulated sugar, confectioners’ sugar, and salt with an electric mixer until smooth. Add egg yolk and vanilla extract and mix. Gently mix in flour until combined. Shape dough into a disk, roll between parchment paper to 1/4 inch thickness, then freeze for at least 1 hour. Preheat oven to 350°F. Cut 12 rounds with 1½ inch cookie cutter. Bake 8-10 minutes until dry. Cool thoroughly.
  4. Prepare almond pistachio nougatine: Preheat oven to 325°F. Melt butter and corn syrup over medium heat in a medium pot. Stir in confectioners’ sugar and pectin, cook to a full boil. Stir in pistachios and almonds. Spread on parchment-lined baking sheet and bake 10-15 minutes until golden. Cool completely. Process finely in a food processor.
  5. Make chocolate mousse: Whip 1 cup heavy cream to soft peaks. Heat milk and remaining cream to just boiling. Meanwhile, beat sugar and egg yolks until smooth. Slowly whisk hot milk into egg yolks, then cook over medium-low heat, whisking until thickened. Strain over chopped milk chocolate and stir until fully melted. Gently fold in whipped cream. Pipe 3-ounce portions into dome molds, leveling with back of spoon. Freeze 20 minutes.
  6. Assemble the domes: Unmold pistachio creme mousseline and press one into each chocolate mousse dome so the base is flush. Sprinkle ½ to 1 teaspoon almond pistachio nougatine over mousseline. Place one vanilla sable cookie on the base of each dome, pressing gently to ensure contact. Freeze at least 2 hours or overnight.
  7. Prepare chocolate glaze: Bloom gelatin by mixing ¼ cup water with gelatin powder, let sit 5 minutes. Heat remaining ¾ cup water, granulated sugar, and sweetened condensed milk to a boil; turn off heat. Stir in vanilla extract and gelatin mixture until dissolved. Pour over chopped chocolate and let sit for 5 minutes. Blend with immersion blender carefully until smooth, avoiding air bubbles. Cool over ice to 75°F, stirring frequently. Strain through fine mesh sieve.
  8. Glaze and garnish domes: Unmold frozen domes and place on wire rack over a baking pan. Pour glaze evenly over each dome. Refrigerate 15 minutes. Carefully lift domes onto dessert plates. Decorate bases with ground pistachios or leftover nougatine and top with whipped cream and whole pistachios. Serve shortly after glazing as the glaze turns gummy if refrigerated over 30 minutes.
