Ingredients

Peanut Butter Ball Mixture

  • 1/2 cup old fashioned rolled oats
  • 1 tablespoon honey

Chocolate Coating

  • 1 1/3 cups dark chocolate chips (or milk chocolate, if you prefer)
  • 1 teaspoon coconut oil
  • Coarse sea salt (optional)

Instructions

  1. Mix Ingredients: Stir together the peanut butter, rolled oats, and honey in a medium bowl until the mixture is well combined and sticky.
  2. Form Balls: Use a small cookie scoop or a regular spoon to portion out about 32 equal-sized portions of the mixture onto a parchment-lined baking sheet. Place the tray in the refrigerator for 20 minutes to firm up slightly.
  3. Shape into Round Balls: After chilling, use your hands to roll each portion into a smooth, round ball. Place the formed balls back onto the parchment-lined baking sheet and transfer the sheet to the freezer while you prepare the chocolate coating.
  4. Melt Chocolate: Melt the chocolate chips together with the coconut oil in a double boiler or in the microwave. If microwaving, heat in 15-20 second increments, stirring well after each until the chocolate is smooth and creamy.
  5. Coat Peanut Butter Balls: Remove the peanut butter balls from the freezer. One or two at a time, roll each ball in the melted chocolate until fully coated. Use a fork to lift them out of the chocolate and place them back on the parchment-lined baking sheet.
  6. Optional Salt Topping and Chill: Sprinkle each chocolate-coated ball with a pinch of coarse sea salt if desired. Refrigerate the balls for at least 1 hour to allow the chocolate to set and the peanut butter center to firm.
