Ingredients

Chocolate Mixture

Instructions

  1. Melt chocolate: In a heatproof bowl set over a saucepan of simmering water, combine the chopped dark bittersweet chocolate, vanilla extract, and unsalted butter. Stir continuously until the chocolate and butter melt smoothly into a glossy mixture. Remove from heat and allow the mixture to cool slightly to a warm temperature.
  2. Add yolks: Separate the cold eggs carefully, placing the yolks in a small bowl. Lightly whisk the egg yolks until smooth. Then, gently stir the yolks into the slightly cooled chocolate mixture until fully incorporated.
  3. Beat whites: Using a clean, dry bowl and whisk or mixer, beat the egg whites along with 3 tablespoons of granulated sugar until stiff peaks form. This means the whites should hold a firm shape and not collapse when the whisk is lifted.
  4. Whip cream: In a separate bowl, whip the chilled heavy cream together with the remaining 2 tablespoons of granulated sugar until soft peaks form. The cream should be airy but still able to hold its shape.
  5. Fold whites: Carefully fold the stiff egg whites into the chocolate and egg yolk mixture using a rubber spatula. Fold slowly and gently to maintain the light, airy texture without deflating the mixture.
  6. Fold cream: Fold the whipped cream into the chocolate mixture until no white streaks remain. Take care not to over mix, as preserving the mousse’s airiness is essential to its light texture.
