This classic Chocolate Icebox Cake is a no-bake dessert featuring layers of chocolate wafer cookies sandwiched with luxuriously whipped vanilla cream. Chilled for several hours, the cookies soften to create a cake-like texture that is rich, creamy, and perfect for chocolate lovers.

Ingredients

Whipped Cream Mixture

  • 3 cups heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Assembly

  • 45 chocolate wafer cookies
  • Chocolate shavings (for garnish)

Instructions

  1. Line the pan: Line a loaf pan with plastic wrap, leaving enough overhang for easy removal of the cake later.
  2. Make the vanilla whipped cream: Using a stand mixer fitted with the whisk attachment or a hand mixer, combine heavy cream, powdered sugar, and vanilla extract. Whip on medium to medium-high speed until stiff peaks form, about 3 to 5 minutes.
  3. Assemble the cake layers: Take one chocolate wafer cookie and spread about a teaspoon of whipped cream on it. Sandwich it with another cookie, gently pressing together. Repeat this process until you have 14 cookie sandwiches.
  4. Layer in pan: Arrange the 14 cookie sandwiches in a single row inside the lined loaf pan. Repeat this layering process until you have 3 rows of 14 sandwiches each, filling the pan.
  5. Top with whipped cream: Spread the remaining whipped cream over the top of the layered cookies, reserving some whipped cream for decoration.
  6. Chill the cake: Cover the top of the cake with plastic wrap and chill in the refrigerator for at least 6 hours or overnight to allow the cookies to soften and the flavors to meld. Keep the reserved whipped cream covered and chilled as well.
  7. Remove from pan: Lift the chilled cake out of the loaf pan using the plastic wrap overhang.
  8. Add toppings: Spread or pipe the reserved whipped cream over the cake surface. Garnish with chocolate shavings and crushed cookies if desired before serving.
