Ingredients

Wet Ingredients

  • 10 pitted Medjool dates
  • 1/4 cup canned or homemade pumpkin purée
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the walnuts: Add the walnuts to a food processor and pulse until they are finely chopped but not turned into a powder. This gives the balls a nice texture.
  2. Add dates and puree: Add the pitted Medjool dates to the food processor along with the pumpkin purée. Blend until the mixture starts to come together and is sticky.
  3. Add cocoa, salt, and vanilla: Sprinkle in the unsweetened cocoa powder, a pinch of sea salt, and vanilla extract. Pulse until the mixture is fully combined and looks like a thick dough.
  4. Shape into balls: Using your hands, scoop out small amounts of the mixture and roll into bite-sized balls, about 1 inch in diameter.
  5. Chill and set: Place the date balls on a parchment-lined tray or container and chill in the refrigerator for at least 30 minutes to set and firm up.
