Ingredients

Cookie Dough

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup semisweet chocolate chips

Cheesecake Filling

  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to ensure the cookie bites don’t stick and bake evenly.
  2. Mix Dry Ingredients: In a medium bowl, sift together the all-purpose flour, unsweetened cocoa powder, baking powder, and salt. Set aside for later use.
  3. Create Cookie Dough: In a large bowl, whisk the melted unsalted butter with granulated sugar until well combined. Add eggs and vanilla extract; mix until smooth and creamy. Gradually add the dry ingredients into the wet mixture and stir until just combined. Fold in the semisweet chocolate chips evenly throughout the dough.
  4. Shape Cookie Bites: Using a tablespoon or cookie scoop, portion out dough onto the prepared baking sheet, spacing them about 2 inches apart to allow spreading.
  5. Bake Cookies: Bake in the preheated oven for 10-12 minutes or until the edges are set but the centers still appear slightly soft. Remove from oven and let cookies cool completely on the baking sheet.
  6. Prepare Cheesecake Filling: In a separate bowl, beat the softened cream cheese, powdered sugar, and lemon zest (if using) until smooth and fluffy.
  7. Assemble Cookie Bites: Once cookies have cooled, gently slice each cookie horizontally in half to create a top and bottom. Pipe or spoon a small amount of cheesecake filling onto the bottom half, then sandwich with the top half.
  8. Chill and Serve: Place the assembled cookie bites in the refrigerator for at least 30 minutes to allow the filling to set. Serve chilled for best results.

Notes

  • Make sure cream cheese is softened to avoid lumps in the filling.
  • If lemon zest is not preferred, you can omit it or substitute with a small amount of vanilla extract.
  • Store assembled cookie bites in an airtight container in the refrigerator for up to 3 days.
  • For extra decoration, dust the finished cookie bites with powdered sugar before serving.
