This Chinese Egg Drop Soup is a warm and comforting dish featuring silky ribbons of egg in a flavorful chicken broth, enhanced with subtle spices and green onions. It’s quick to make and perfect for a light meal or appetizer.

Ingredients

Soup Ingredients

  • 3 eggs
  • 1 tablespoon water
  • 4 cups chicken stock
  • ¼ teaspoon salt
  • ⅛ teaspoon white pepper (more to taste)
  • ¼ teaspoon chicken bouillon powder
  • ⅛ teaspoon turmeric powder (optional, for color)
  • 2 stalks green onions, sliced (whites and green parts divided)
  • ½ teaspoon sesame oil

Cornstarch Slurry

  • 2 tablespoons cornstarch
  • 3 tablespoons water

Instructions

  1. Prepare Egg Mixture: In a small bowl, beat the 3 eggs together with 1 tablespoon of water until combined and slightly frothy; set aside.
  2. Make Cornstarch Slurry: In another bowl, mix 2 tablespoons of cornstarch with 3 tablespoons of water until smooth; set aside for thickening the soup later.
  3. Heat the Broth: In a pot, bring 4 cups of chicken stock to a gentle boil over medium heat. Once boiling, reduce the heat to low and add ¼ teaspoon salt, ⅛ teaspoon white pepper, ¼ teaspoon chicken bouillon powder, and ⅛ teaspoon turmeric powder if using; stir well to combine.
  4. Add Green Onion Whites: Stir in the sliced white parts of the green onions to the broth and let it simmer gently for about 2 minutes to release flavors.
  5. Thicken the Soup: Slowly pour the cornstarch slurry into the simmering broth while continuously stirring. Cook for another 1-2 minutes until the broth thickens slightly and becomes silky in texture.
  6. Create the Egg Ribbons: Slowly drizzle the beaten eggs into the hot broth in a thin stream while gently stirring the soup in one direction with a fork or chopsticks. This will create delicate egg ribbons throughout the soup.
  7. Finish with Green Onion Greens and Sesame Oil: Add the sliced green parts of the green onions and ½ teaspoon sesame oil. Stir gently, then remove from heat.
  8. Serve: Ladle the soup into bowls and serve immediately while warm, enjoying its comforting texture and flavors.

Notes

  • To avoid clumps in the soup, drizzle the egg slowly and stir gently while adding it to the broth.
  • You can substitute chicken stock with vegetable broth for a lighter or vegetarian-friendly version.
  • Adding turmeric is optional but gives the soup a lovely golden hue without altering flavor much.
  • Adjust seasoning with additional white pepper or salt according to taste.
  • For a thicker soup, increase cornstarch slurry slightly but avoid over-thickening.
  • Serve with crusty bread or steamed rice for a more filling meal.
