Vinaigrette Ingredients

  • 1/4 cup rice vinegar
  • 2 tablespoons honey
  • 2 tablespoons avocado oil
  • 1 tablespoon toasted sesame oil
  • 2 teaspoons low sodium soy sauce (or tamari)
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon toasted sesame seeds
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the vinaigrette: Combine rice vinegar, honey, avocado oil, toasted sesame oil, low sodium soy sauce (or tamari), grated fresh ginger, toasted sesame seeds, kosher salt, and freshly ground black pepper in a jar or bowl. Shake or whisk well until the dressing is thoroughly mixed. Refrigerate the vinaigrette until ready to serve.
  2. Assemble the salad: In a large mixing bowl, combine the chopped romaine lettuce, shredded napa cabbage, cooked shredded chicken, shredded carrots, chopped red bell pepper, shelled edamame, sliced green onions, chopped cilantro, toasted sliced almonds, and toasted sesame seeds.
