Ingredients

Chickpea Salad Filling

  • 2 15-ounce cans chickpeas, drained and rinsed
  • 1 large avocado or 2 small avocados
  • 1 jalapeño, chopped
  • 1/2 red onion, chopped
  • 1/4 cup mustard
  • 1/4 cup vegan mayo
  • Pepper to taste
  • Garlic salt to taste
  • Hot sauce to taste

Assembly

  • 2 large tortillas or wraps
  • 2 handfuls baby spinach

Instructions

  1. Mash the Chickpeas and Avocado: Add the drained and rinsed chickpeas to a bowl and mash them with a fork until you reach a chunky consistency. Add the avocado and continue mashing until the avocado is thoroughly combined with the chickpeas, creating a creamy base.
  2. Mix the Flavorings: Incorporate the chopped jalapeño, chopped red onion, mustard, vegan mayo, pepper, garlic salt, and hot sauce into the mashed mixture. Stir everything together until evenly combined. Taste the mixture and adjust any seasonings according to your preference. Refrigerate the chickpea salad for at least 30 minutes to allow the flavors to meld.
  3. Assemble the Pinwheels: Lay out each tortilla and spread an even layer of the chickpea salad filling, distributing it evenly towards the edges. Place a handful of fresh baby spinach over half of the filling on each tortilla.
  4. Roll and Slice: Starting from the side with the spinach, tightly roll up each tortilla until you reach the opposite edge. Using a sharp knife, carefully cut each rolled wrap into 8 pinwheel pieces.
  5. Serve or Store: Serve the chickpea salad pinwheels immediately as a fresh snack or light meal. Alternatively, store them in an airtight container in the refrigerator until ready to serve.

Notes

  • For best texture, use ripe avocados to ensure creaminess.
  • Adjust the amount of jalapeño and hot sauce to control the heat level.
  • These pinwheels can be prepared in advance and stored for up to 2 days refrigerated.
  • Use gluten-free tortillas to make this recipe gluten-free.
  • If you want a tangier flavor, increase the mustard incrementally.
