Instructions

  1. Mix dry ingredients: In a mixing bowl, combine chickpea flour, nutritional yeast, and black salt. Stir thoroughly to evenly distribute all ingredients.
  2. Add water and create batter: Pour in half of the water and stir well until a smooth paste forms. Add the remaining water and stir again to achieve a consistent, lump-free batter. Set aside while preparing vegetables.
  3. Prepare vegetables: Dice your chosen vegetables to roughly 1/4 cup to add texture and flavor to the omelette.
  4. Sauté vegetables: Heat 1 tablespoon of oil in a well-seasoned iron skillet or non-stick pan over medium-low heat. Add vegetables and sauté for 3-5 minutes until they soften and release their flavors.
  5. Combine vegetables with batter: Remove the vegetables from the pan and mix them gently into the chickpea batter. Stir to combine evenly.
  6. Cook the omelette batter: Increase heat to medium. Pour the batter mixture into the skillet like a large pancake. Cook for about 5 minutes until the top surface is no longer wet. Covering with a lid for a minute or two helps cook it evenly.
