Instructions

  2. Simmer: Add the chopped chipotle peppers in adobo sauce, diced tomatoes with green chiles, and chicken broth to the pan. Stir to combine thoroughly, cover the pan, and let the mixture simmer for 5 minutes so the flavors meld together.
  3. Blend: Transfer the sauce from the pan into a blender using a rubber spatula. Blend just until the sauce becomes smooth and consistent. Pour the blended sauce back into the pan, adding a bit of water to the blender to capture and mix any remaining sauce.
  4. Finish: Add the shredded cooked chicken to the pan with the sauce. Cook on medium-low heat just until the chicken is thoroughly warmed through. Season with salt and pepper to taste.
