Ingredients

Tortillas & Chicken

  • 8 Small corn tortillas
  • 3 cups Cooked chicken cut into bite-sized pieces

Red Cabbage Slaw

  • 2 cups Shredded red cabbage
  • 2 tablespoons Lime juice (divided use)
  • 1 tablespoon Olive oil
  • 1/2 cup Chopped cilantro (divided use)
  • Salt to taste

Avocado Salsa

  • 1 cup Cored, seeded and diced tomatoes
  • 1 cup Diced avocado
  • 2 tablespoons Minced red onion
  • 1 tablespoon Lime juice
  • 1/4 cup Chopped cilantro
  • Salt to taste

Instructions

  1. Prepare the Cabbage Slaw: Place the shredded red cabbage in a medium bowl. Add 1 tablespoon lime juice, 1 tablespoon olive oil, 1/4 cup chopped cilantro, and salt to taste. Toss everything together until well combined. Set aside to let the flavors meld. This slaw can be made ahead and refrigerated for up to 8 hours.
  2. Make the Avocado Salsa: In another medium bowl, combine the diced tomatoes, diced avocado, minced red onion, 1 tablespoon lime juice, 1/4 cup chopped cilantro, and salt to taste. Mix gently to combine, then cover and refrigerate for 10-15 minutes to allow the flavors to develop.
  3. Assemble the Tacos: Warm the corn tortillas until soft and pliable, either on a hot skillet or in the microwave. Lay the tortillas flat and spoon approximately 1/4 cup of the cabbage slaw onto each. Evenly distribute the cooked chicken on top of the slaw, then top each tortilla with a generous spoonful of the avocado salsa.
