These Chicken Parmesan Sliders feature tender, slow-cooked shredded chicken soaked in marinara sauce, layered with melted provolone and Parmesan cheeses on soft slider buns. Perfect for a crowd-pleasing appetizer or a delicious party snack, these sliders are easy to prepare in a slow cooker and can be finished under the broiler for a toasty, melty cheese topping.

Ingredients

Chicken and Sauce

  • 2 pounds boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 3 cups marinara sauce (homemade or store-bought)
  • Optional: 2 teaspoons fresh pre-minced garlic
  • Optional: 1 teaspoon Italian seasoning, crushed

Assembly

  • 12 slider wheat buns or rolls
  • 3/4 cup freshly grated Parmesan cheese
  • 6 slices provolone cheese, cut into fourths (or substitute mozzarella cheese slices)

Instructions

  1. Season the Chicken: Lightly season all sides of the chicken breasts with salt and pepper to enhance the flavor before cooking.
  2. Slow Cook the Chicken: Place the seasoned chicken breasts into the slow cooker. Pour in the marinara sauce, and if using, add the minced garlic and Italian seasoning. Cook on LOW for 2 1/2 to 3 hours until the chicken is cooked through and shreds easily with two forks.
  3. Shred the Chicken: Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the sauce in the slow cooker to keep it moist and flavorful.
  4. Toast the Buns (Optional): Preheat the broiler. Slice open the slider buns and place them on a sheet pan, cut side up. Broil for 1 to 2 minutes until toasted. Watch carefully to avoid burning.
  5. Assemble the Sliders: Spoon a generous amount of hot shredded chicken onto the bottom half of each toasted bun. Sprinkle about 1 tablespoon of grated Parmesan cheese over the chicken, then top with two pieces of provolone or mozzarella cheese.
  6. Melt the Cheese (Optional): For a melty cheese topping, place the assembled sliders open-faced on the sheet pan and broil for about 1 minute until the cheese is melted and bubbly. Remove from the oven and place the top bun on each slider to serve.

Notes

  • Cooking time may vary depending on your slow cooker model; chicken should reach an internal temperature of 165°F.
  • For a gluten-free option, substitute slider buns with gluten-free rolls.
  • Broiling steps are optional but recommended for enhanced flavor and texture.
  • Use freshly grated Parmesan for the best flavor; pre-grated tends to be less flavorful.
  • To make it spicier, add red pepper flakes to the marinara sauce before cooking.
