Ingredients

Dressing

  • ⅓ cup extra virgin olive oil

Chicken

  • 2 lbs chicken breast (tenderloins recommended)

Salad

  • 8 cups kale leaves (or mixed greens)
  • 1 cup cherry tomatoes (or grape tomatoes, halved)
  • 1 cup mini mozzarella balls (halved)
  • 1 cup sweet corn kernels
  • 2 avocados, diced and sprinkled with lime juice
  • 1 bunch fresh basil leaves, shredded

Instructions

  1. Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, minced onion, minced garlic, balsamic vinegar, Dijon mustard, honey, kosher salt, and black pepper until well combined. Cover and refrigerate the dressing until ready to use.
  2. Prepare the Chicken: Pat the chicken breasts dry with paper towels to remove any excess moisture. Season both sides evenly with kosher salt and freshly ground black pepper, pressing the seasoning into the meat to adhere well.
