Ingredients

Chicken Seasoning

  • 450 g chicken breasts (about 2 breasts)
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons paprika
  • 2 teaspoons Italian seasoning
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1/4 teaspoon chili powder
  • 1 and 1/2 tablespoons lemon juice
  • Zest of 1/2 lemon

Alfredo Sauce

  • 1/2 cup butter
  • 5 cloves garlic, minced
  • 3 cups heavy cream
  • 2 cups parmesan cheese, freshly shredded
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste

Cheese Mixture

  • 15 oz ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, shredded
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Other

  • 20 lasagna sheets
  • 2 to 2 and 1/2 cups mozzarella cheese, freshly shredded (for topping)

Instructions

  1. Season the Chicken: In a bowl, combine garlic powder, onion powder, paprika, Italian seasoning, salt, black pepper, chili powder, lemon juice, and lemon zest. Rub this seasoning mix evenly over the chicken breasts to coat them thoroughly.
  2. Cook the Chicken: Heat a large skillet over medium-high heat. Cook the seasoned chicken breasts until they develop a golden crust on both sides and the internal temperature reaches about 150°F (65°C). Remove from heat and allow to rest until temperature reaches 165°F (74°C), then dice into bite-sized pieces.
  3. Prepare Alfredo Sauce: Using the same skillet, melt the butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream, then stir in Italian seasoning, salt, and black pepper. Bring to a gentle simmer, reduce heat to low, and gradually mix in parmesan cheese until fully melted and sauce is smooth. Remove from heat and set aside.
  4. Make the Cheese Mixture: In a separate bowl, combine ricotta cheese, shredded mozzarella, shredded parmesan, egg, garlic powder, black pepper, and chopped fresh parsley. Stir until the mixture is well combined and creamy.
  5. Soften the Lasagna Sheets: Place lasagna sheets in a large dish and cover with very hot tap water. Let soak for about 15 minutes until the sheets are flexible, then drain well.
  6. Preheat the Oven: Preheat your oven to 375°F (190°C).
  7. Assemble the Lasagna: Spread a layer of Alfredo sauce on the bottom of a large baking dish. Add a layer of soaked lasagna sheets, then spread the ricotta cheese mixture, sprinkle diced chicken pieces, pour another layer of Alfredo sauce, and sprinkle shredded mozzarella. Repeat layering until all ingredients are used, finishing with Alfredo sauce and a generous topping of shredded mozzarella cheese.
  8. Bake Covered: Cover the baking dish tightly with foil and bake in the preheated oven for 40 minutes.
  9. Bake Uncovered: Remove the foil and continue baking uncovered for an additional 20 minutes until the lasagna is hot and bubbling.
  10. Broil for Color: Turn the oven to broil and place the lasagna under the broiler for a few minutes, watching carefully until the cheese topping is golden brown and bubbly.
  11. Rest Before Serving: Let the lasagna rest for 10–15 minutes after baking to set. Then slice and serve warm.
