Instructions

  1. Prepare Peppers: Drain the hot cherry peppers and reserve 2 tablespoons of the brine. Remove any stems from the peppers. For medium heat, scrape out some of the seeds and innards; leave them in if you prefer a hotter batch.
  2. Chop Peppers: Pulse the peppers in a food processor 5 to 6 times until they are finely chopped but still chunky. Alternatively, hand dice the peppers finely to achieve a relish-like texture, making sure not to puree them into a paste.
  3. Combine Ingredients: In a medium bowl, combine the chopped peppers with the reserved brine, white wine vinegar, grated or minced garlic, sugar, and salt. Stir well to combine all flavors evenly.
  4. Add Optional Ingredients: Stir in the extra virgin olive oil and dried oregano if using, which add richness and a hint of herbal flavor to the relish.
  5. Adjust Seasoning: Taste the relish and adjust the seasoning as needed. Add a pinch more sugar to balance the heat, a splash more vinegar to brighten the flavor, or additional salt to enhance seasoning.
