  • 2 cups whole milk, room temperature

Instructions

  1. Prepare the vegetables: Peel the russet potatoes and slice them into ¼-inch thick slices. Slice the yellow onion into rings as well. Set aside.
  2. Make the roux: In a medium saucepan, melt the unsalted butter over medium heat. Once melted, whisk in the all-purpose flour and kosher salt, cooking for about 1-2 minutes until the mixture forms a lightly golden paste and loses its raw flour taste.
  3. Add milk and thicken sauce: Gradually whisk in the room temperature whole milk to the roux, stirring constantly to avoid lumps. Continue cooking and whisking for 5-7 minutes until the sauce thickens to a creamy consistency.
  4. Add cheese: Remove the sauce from heat and stir in 1 ½ cups of shredded mild cheddar cheese until melted and fully combined. Taste and adjust seasoning with salt and pepper as desired.
  5. Assemble the casserole: In a greased baking dish, layer half of the sliced potatoes evenly. Top with half of the sliced onion rings, then pour half of the cheese sauce over the top. Repeat with remaining potatoes, onions, and cheese sauce, ensuring the last layer is coated with the cheese sauce.
