Ingredients

Filling

  • 1 ⅔ cups frozen spinach, thawed overnight in the fridge
  • 6 oz cream cheese, softened
  • 1/3 cup mayonnaise
  • 1 1/2 cups shredded mozzarella cheese
  • 3/4 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp fine sea salt
  • 1/4 tsp black pepper

Assembly & Topping

  • 8 butter croissants
  • 1 tbsp honey
  • 1 tbsp + 2 tsp everything but the bagel seasoning

Instructions

  1. Prepare the spinach filling: In a medium bowl, thoroughly mix the thawed spinach, softened cream cheese, mayonnaise, shredded mozzarella, onion powder, garlic powder, sea salt, and black pepper until well combined and creamy.
  2. Slice the croissants: Carefully slice each butter croissant horizontally but not all the way through, creating a pocket for the filling.
  3. Fill the croissants: Spoon a generous amount of the spinach and cheese mixture into each croissant pocket, spreading it evenly inside.
  4. Top the croissants: Brush the outside of each filled croissant lightly with honey, then sprinkle the tops evenly with everything but the bagel seasoning for extra flavor and crunch.
  5. Bake the croissants: Preheat your oven to 350°F (175°C). Place the filled and topped croissants on a baking sheet lined with parchment paper. Bake for 15-18 minutes, or until the croissants are golden brown and the cheese filling is hot and melted.
  6. Serve warm: Remove from the oven and let cool slightly before serving to enjoy the gooey, cheesy spinach filling inside flaky croissants.

Notes

  • Ensure the spinach is thoroughly thawed and drained to avoid excess moisture in the filling.
  • Use fresh butter croissants for the best flaky texture and flavor.
  • The honey brushed on top adds a subtle sweetness that balances the savory filling and seasoning.
  • Feel free to substitute mozzarella with your favorite melting cheese, like cheddar or provolone.
  • These croissants are best enjoyed fresh but can be reheated in the oven to restore crispness.
