Cheesy Dorito Chicken Casserole is a quick and flavorful dinner that combines shredded chicken with creamy soup, vegetables, and crunchy Nacho Cheese Doritos. This American-style casserole is packed with cheese, tomatoes, corn, black beans, and taco seasoning, baked to bubbly perfection for a comforting meal your whole family will enjoy.

Ingredients

Protein and Dairy

  • 3 cups cooked and shredded chicken
  • 1 cup sour cream
  • 2 (10 oz.) cans condensed cream of chicken soup
  • 2 cups shredded cheddar cheese

Vegetables and Beans

  • 1 (10 oz.) can diced tomatoes and green chilies (Rotel), drained
  • 1 (15 oz.) can whole kernel corn, drained
  • 1 (15 oz.) can black beans, rinsed and drained

Seasoning and Chips

  • 1 oz. package taco seasoning
  • 15 oz. bag Nacho Cheese Doritos

Instructions

  1. Preheat Oven: Preheat the oven to 350 degrees Fahrenheit. Spray a 9"x13" baking dish with nonstick spray and set aside.
  2. Prepare Chips Base: Crush the Nacho Cheese Doritos and place half of the crushed chips evenly in the bottom of the prepared casserole dish.
  3. Mix Filling: In a large mixing bowl, combine the sour cream, cream of chicken soup, drained diced tomatoes and green chilies, drained corn, rinsed black beans, taco seasoning, and 1 cup of shredded cheddar cheese. Stir well to mix all ingredients evenly.
  4. Add Chicken: Add the shredded chicken to the mixture and stir gently until all components are well combined.
  5. Assemble Casserole: Spread the chicken and vegetable mixture evenly over the layer of crushed Doritos in the casserole dish. Then top with the remaining shredded cheddar cheese and the remaining crushed Doritos.
  6. Bake: Place the casserole in the oven and bake uncovered for 25-30 minutes or until the casserole is hot and bubbly throughout and the cheese is melted and slightly golden.
  7. Serve and Garnish: Remove from oven and top with your favorite garnishes such as diced jalapenos, sour cream, chopped onions, and salsa before serving for added flavor and texture.

  • For extra spice, add finely chopped jalapenos into the filling mixture.
  • This casserole can be made ahead of time and refrigerated before baking; just add an additional 5-10 minutes to the bake time if baking cold.
