This Cheesy Crockpot Buffalo Chicken Dip is a creamy, spicy crowd-pleaser perfect for parties or game days. Made with shredded chicken, buffalo sauce, cream cheese, Greek yogurt, ranch seasoning, and melty Colby Jack cheese, it’s slow-cooked to bubbly perfection in a crockpot. Serve it hot with tortilla chips or fresh veggies for dipping.

Ingredients

Dip Ingredients

  • 4-4.5 cups cooked and shredded chicken (about 1.5 lbs, 3-4 medium chicken breasts)
  • 8 oz cream cheese, softened (regular or dairy-free)
  • 1 cup buffalo sauce
  • 1 cup Greek yogurt (or dairy-free yogurt of choice)
  • 2 tbsp ranch seasoning (or 1 store-bought packet)
  • 1 ½ cups shredded Colby Jack cheese (regular or dairy-free)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste

For Serving

  • Tortilla chips
  • Celery sticks
  • Carrot sticks

Instructions

  1. Combine Ingredients: In the crockpot, add the shredded chicken, softened cream cheese, buffalo sauce, Greek yogurt, ranch seasoning, shredded Colby Jack cheese, garlic powder, and onion powder. Stir everything together until fully combined and spread out evenly in the pot.
  2. Cook the Dip: Cover the crockpot and cook on low heat for 2-3 hours, or on high heat for 1-1.5 hours, until the dip is hot and bubbly throughout. Stir occasionally if possible. After cooking, taste and season with salt and pepper as needed.
  3. Serve: Serve the hot buffalo chicken dip immediately with tortilla chips, celery sticks, or carrot sticks for dipping.

Notes

  • You can use regular or dairy-free versions of cream cheese, Greek yogurt, and cheese to accommodate dietary preferences.
  • Adjust the amount of buffalo sauce to your preferred spice level.
  • If you don’t have a crockpot, the dip can be assembled and baked in an oven-safe dish at 350°F (175°C) for 20-25 minutes, until hot and bubbly.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently before serving.
