Ingredients

Cookie Dough

  • 1 tablespoon corn starch

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it's ready for baking the cookies.
  2. Cream Butter and Sugars: In a large mixing bowl, combine the softened unsalted butter with the light brown sugar and granulated sugar. Use an electric or stand mixer with a paddle attachment and beat on medium speed until the mixture is creamy, light, and fluffy, about 1-2 minutes.
  3. Add Eggs and Vanilla: Add the two eggs and pure vanilla extract to the butter-sugar mixture. Mix well, occasionally scraping down the sides and bottom of the bowl to incorporate all ingredients evenly.
  4. Combine Dry Ingredients: In a separate medium bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, nutmeg, and salt.
  5. Mix Dry into Wet: Gradually add the dry ingredients into the wet mixture in batches, stirring gently and scraping the sides of the bowl periodically to ensure thorough mixing without overworking the dough.
  6. Add Oats: Stir in the old-fashioned oats until completely combined with the dough.
  7. Incorporate Carrots and Nuts: Fold in the grated carrots and chopped walnuts or pecans. If you choose to use raisins, add them at this stage as well.
