Ingredients

Sauce

  • 1 tablespoon soy sauce
  • ¼ cup water
  • 2 tablespoons sugar

Egg Mixture

  • 6 large eggs, whisked
  • ¼ teaspoon salt
  • ¼ teaspoon white pepper

Main

  • 1 can (12 oz) Spam, diced into 1-inch cubes

Serving and Garnishes

  • 2 cups cooked white rice
  • Furikake, for sprinkling
  • Green onion, sliced
  • Fried garlic (see notes for preparation)

Instructions

  1. Prepare the caramel sauce: In a bowl, mix soy sauce, water, and sugar thoroughly until the sugar dissolves. This mixture will be used to caramelize the Spam cubes.
  2. Caramelize the Spam: Heat a skillet over medium-high heat. Add the diced Spam cubes and pour the soy sauce-based mixture over them. Cook, stirring occasionally, until the Spam becomes golden brown and caramelized, about 5-7 minutes. The sugar will thicken and coat the Spam pieces enhancing their flavor.
  3. Whisk the eggs: In a separate bowl, whisk together the eggs, salt, and white pepper until fully combined and slightly frothy.
  4. Cook the eggs: Pour the egg mixture into the skillet with the caramelized Spam. Reduce heat to medium-low and stir gently to scramble the eggs together with the Spam, cooking until the eggs are softly set but still moist, about 3-5 minutes.
  5. Assemble and serve: Spoon the caramelized Spam and eggs over the cooked white rice. Garnish generously with furikake, sliced green onions, and fried garlic for added texture and umami. Serve immediately while hot.

Notes

  • Fried garlic: thinly slice garlic cloves and fry in oil until golden and crispy, then drain on paper towels. Use as a crunchy topping.
  • You can adjust the sugar amount for less or more sweetness depending on your taste preference.
  • For a healthier option, choose low-sodium soy sauce and drain excess oil from the Spam after caramelizing.
  • This recipe is versatile; you can substitute white rice with brown rice for added fiber.
