Ingredients

Pastry

  • 1 puff pastry sheet (thawed)
  • 1 1/2 tablespoons cold butter (cubed)
  • 1 egg wash (1 egg beaten with a tablespoon of water)

Filling

  • 4 medium red onions
  • 5 tablespoons brown sugar
  • 2 teaspoons apple cider vinegar
  • 4 tablespoons fig jam
  • 3-4 tablespoons feta cheese (crumbled)
  • Olive oil (for cooking onions)

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to ensure a hot environment for baking the tart.
  2. Caramelize Onions: In a large skillet, heat some olive oil over medium heat. Add the sliced red onions and cook until softened. Stir in the brown sugar and apple cider vinegar, then simmer until the sugar melts and the mixture becomes bubbly, syrupy, and dark golden brown.
  3. Prepare Pastry: Roll out the thawed puff pastry sheet on a flat surface. Transfer it carefully to a baking sheet or tart pan lined with parchment paper.
  4. Score Pastry: Score a border about 1 inch from the edges of the puff pastry using the tip of a sharp knife. Poke the inside section several times with the tines of a fork to prevent it from puffing excessively.
  5. Spread Fig Jam: Evenly spread most of the fig jam across the inner section of the pastry, reserving some for later use.
  6. Add Filling: Arrange the caramelized onions over the jam, then sprinkle the crumbled feta cheese on top and dot with the cubed cold butter.
  7. Fold Edges and Brush: Fold the edges of the pastry inward over the filling. Brush the folded edges generously with the egg wash to promote browning.
  8. Bake: Bake the tart in the preheated oven for 20 to 25 minutes, until the pastry is golden brown and puffed.
  9. Glaze and Serve: Warm the reserved fig jam slightly in the microwave until loose. Brush it over the baked tart for a glossy finish. Allow the tart to cool a few minutes before slicing and serving.
