Ingredients

For the Pasta:

  • 12 ounces pasta (such as fettuccine or linguine)

For the Sauce:

  • 2 tablespoons olive oil
  • 2 medium leeks (white and light green parts only), thinly sliced
  • 8 ounces cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup dry white cooking broth (or vegetable stock)
  • 1/2 cup heavy cream
  • 1 cup shredded Gruyere cheese
  • 1/4 teaspoon freshly ground black pepper
  • Salt, to taste
  • 1/4 cup chopped fresh parsley (optional, for garnish)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta, reserving about 1/2 cup of the pasta water, then set aside.
  2. Caramelize the Leeks and Mushrooms: Heat the olive oil in a large skillet over medium heat. Add the sliced leeks and cook, stirring occasionally, until they become soft and caramelized, about 8-10 minutes. Add the sliced mushrooms and continue to cook until they release their moisture and are browned, about 5-7 more minutes.
  3. Add Garlic and Deglaze: Stir in the minced garlic and cook for about 1 minute until fragrant. Pour in the dry white cooking broth or vegetable stock to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for 2-3 minutes to reduce slightly.
  4. Create the Creamy Sauce: Lower the heat and stir in the heavy cream. Bring to a gentle simmer and cook until the sauce thickens slightly, approximately 3-4 minutes.
  5. Add Cheese and Seasoning: Remove the skillet from the heat and stir in the shredded Gruyere cheese until melted and smooth. Season with freshly ground black pepper and salt to taste. If the sauce is too thick, add a splash of reserved pasta water to loosen it.
  6. Toss Pasta and Serve: Add the cooked pasta to the skillet and toss everything together until the pasta is evenly coated with the sauce. Garnish with chopped fresh parsley if desired, and serve immediately while warm.
